Bayab: Sustainability Is More Than Just a Buzzword

At Bayab, sustainability isn’t just a catchphrase—it’s at the core of everything the company does. The gin is crafted in a fully solar-powered distillery, where environmentally responsible practices are prioritized at every step. Raw ingredients are sourced from suppliers committed to sustainability, environmental responsibility, and organic farming.

The water used in the fermentation process is recycled from the distillation system, reducing waste and conserving resources. The distillery generates more solar energy than it consumes, allowing Bayab to contribute surplus power back to local townships, supporting the community’s energy needs.

Bayab proudly partners with Ho Technical University in Ghana to preserve Africa’s iconic Baobab tree. The Baobab, made famous by The Lion King, where Rafiki perches in its massive branches, not only inspired the name of Bayab’s gin but also serves as the core botanical in the company’s award-winning gins.

The conservation project focuses on accelerating the Baobab’s growth, enhancing cultivation practices, and protecting these majestic trees from threats as the fruit gains popularity.

Finally, Bayab ensures responsible waste management by partnering with certified recycling and disposal companies, which undergo regular evaluations to maintain high environmental standards.

Domaine du Coquerel: Sustainability in Every Sip

Domaine du Coquerel is leading the way in sustainable Calvados production! By sourcing apples from local Normandy orchards and partnering with nearby farms, they support the local agricultural community while embracing the unique terroir that gives Coquerel Calvados its exceptional flavor and aroma.

But that’s not all—Domaine du Coquerel is innovating and modernizing the spirit world, all while achieving a carbon-negative footprint. Each bottle offsets 6 pounds of CO₂, thanks to renewable energy, energy-efficient processes, and carbon sequestration projects like reforestation.

Domaine du Coquerel's commitment to sustainability extends to achieving a carbon-negative footprint for each of its Calvados bottles by offsetting six pounds of carbon. This impressive environmental effort means that the entire production process—from apple cultivation and harvesting to distillation, aging, and bottling—results in a net reduction of six pounds of carbon dioxide from the atmosphere per bottle. The offset is accomplished through a combination of practices such as using renewable energy sources in production, implementing energy-efficient processes, and supporting carbon sequestration projects like reforestation or sustainable agriculture initiatives.

By going beyond carbon neutrality, Domaine du Coquerel not only minimizes its environmental impact but also actively contributes to combating climate change, setting a high standard for sustainability in the spirits industry.

Four Pillars Gin: A Long Term Sustainability Plan

In April 2022, Four Pillars Gin became the first gin distillery in Australia to achieve carbon neutral product certification for our gins bottled onsite at the distillery, as well as organization certification for the entire Four Pillars business.

Awarded by Climate Active (an Australian government initiative), this certification is only given to businesses that have reached a state of achieving zero net emissions. They achieved product carbon neutral certification after working with Climate Active and Ndevr Environmental for over a year, tracking their gin’s full journey, from what goes into the gin, to how it is made, and to where it goes beyond the distillery door. And thanks to their partners at Lion, they were able to achieve carbon neutrality for their business operations by being included in the boundary of Lion Australia’s organization certification, which was awarded in 2021.

Four Pillars always did their best to recycle, reuse and reduce the impact on the environment. From turning the spent oranges from the Rare Dry Gin distillations into the much-loved Made From Gin orange marmalade, to installing solar panels on the roof of the distillery, to now offsetting what can be an energy-intensive production process. 

Singani 63: Honor Tradition And The Environment

Singani 63 is dedicated to sustainable production, ensuring that every bottle reflects both craftsmanship and environmental responsibility.

Water Conservation & Recycling

A decade ago, Casa Real, the home of Singani 63, implemented an advanced water treatment process to enhance irrigation efficiency. By adopting a precision drip irrigation system, the vineyard minimizes water waste while maximizing vine health. Additionally, investments in geomembranes have eliminated water losses in reservoirs, ensuring optimal water conservation.

Beyond vineyard irrigation, all water used in the distillery undergoes treatment and is recycled back into the irrigation system. This closed-loop approach significantly reduces waste and reinforces the brand’s commitment to responsible resource management.

Sustainable Certifications

Casa Real’s sustainability efforts have been recognized through industry-leading certifications. The facility’s warehouse holds LEED certification, a globally recognized standard for energy-efficient and environmentally responsible buildings. Furthermore, its viticulture practices have received a sustainable certification from the GIZ, a German institution committed to promoting responsible agricultural and environmental stewardship.

Through these initiatives, Singani 63 continues to uphold its commitment to sustainability, ensuring that its production practices honor both tradition and the environment.

Suro Imports & Don Mateo: The Bat Friendly Tequila and Mezcal™ Project

The Bat Friendly Tequila and Mezcal™ Project encourages producers to allow a small percentage of agave plants to flower, supporting bat populations and sustainable agave cultivation. Fields that conserve at least 5% of agave plants and permit them to flower qualify to produce tequila and mezcal labeled as bat-friendly.

Agave expert David Suro of Suro Imports and Emilio Vieyra of Don Mateo Mezcal serve on the Board of Directors for the Bat Friendly project, advocating for and supporting sustainable practices within the agave industry. Project members commit to protecting 5% of agave plants in their plantations, allowing them to flower and be pollinated by bats that feed on the agave’s nectar. This natural pollination process enables the plants to reproduce from genetically diverse seeds, ensuring both the survival of the endangered Mexican Flowering Bat (Leptonycteris nivalis) and the genetic diversity of agave plants.

For Don Mateo and the Vieyra family, sustainability goes beyond bat-friendly practices. Their family-owned operation distills agave spirits without the use of chemicals—both in agriculture and in the distillation process—further reinforcing their commitment to environmental stewardship.
