Wine Production
Alcoholic and malolactic fermentations take place in 400L un-toasted new French oak barrels. It then stays in these barrels for 10 months aging on its own lees. During the first 10 days, the barrels are stirred every 2 hours by hand, and after that, twice per day. Once this process has finished, the wine rests in 225L new French barrels for 8 months, followed by at least 22 months aging in bottle.
About the Vineyard
From the Finca Fuentellamas vineyard in Gumiel de Mercado. Vines with an age of 100 years are grown at an elevation of 850m. Sandy
soils are very poor in nutrients and have minimal water retention. This translates in low yields and wines of great personality and refinement.
