Brand Description
The winery is a new modern construction that was built to make the wine as naturally as possible, avoiding pumps and heavy duty machinery. The winery has a grape reception area where the hand picked small crates of grapes arrive and follow the careful temperature controlled process with gentle pressing after being de-stemmed before maceration and fermentation in new small stainless steel tanks. There is a small separate barrel room where the wine is aged and also temperature controlled. Upstairs there is living space for the family, so that in the warmer summer months when there is more work preparing the harvest and testing the progress of the grapes they are 100% of the time on hand with the village being a whole 3 minutes walk away. The winery is built to be able to produce a maximum of 120,000 bottles - being the full production from their own vineyards.
Location of Vineyard
The winery is located in La Serra d'Almos (Montsant). Serra d´Almos is located at one of the highest parts of the Montsant DO climatically protected by two mountain ranges which ensures the healthy long ripening season for the grapes with larger than normal temperature swing day to night giving natural acidity and freshness to the grapes.
Winemaking and Viticulture Philosophy
Xavier Cedó, the owner of the parcel of land, practices sustainable agriculture and focuses on biodiversity allowing olives trees, cherry trees and grape vines to planted together in a symbiotic environment.
The vineyards thrive in healthy competition with the cherry trees for nutrients with their harvest in May. The region of Montsant, known for their centenary olive trees, will harvest the olives after the grapes (normally September) in November / December.
This ensures quality not quantity and more finesse, elegance and vibrant fruit for the resulting wines.
