Wine Production
Grapes were harvested at night to preserve the the tropical fruit and floral aromas. The wine undergoes a 10 hour maceration at 8ºC, then is fermented in temperature controlled stainless steel tanks at 16ºC.

Faustino Sauvignon Blanc is made from the best grapes selected in Finca Los Hinojosos, one of the higher altitude estates the Familia Martinez Zabala owns in La Mancha at an elevation of 780m.
