This tightly wound and angular red’s driving force is its nervy acidity, with a minerally base to the tart cherry and cranberry core. Hints of cinnamon bark and fresh herbs arrive on the finish around firming tannins. Offers the structure to lay down, but whether this will open up is hard to determine at this stage. — Wine Spectator, Feb 2025

Wine Production

Dijon Clone 115 is Fermented with 40% whole cluster and indigenous yeast in a 600L oak roll-fermentor. 10-12 day maceration, with malolactic fermentation in barrel.

About the Vineyard

Both Domaine Nico La Savante and Historie d'A are whole cluster fermented to highlight the texture and graininess of the wines. Histoire d'A is more generous due to the greater sun exposure, with cinnamon, clove, and a perceived sweetness to the tannins.
