“The 2020 La Savante Pinot Noir was produced with fruit from the vineyard called El Mirador, 1.45 hectares planted in 1994 with Pinot Noir clones 115 and 777 in the monastery part of Gualtallary at 1,450 meters in altitude; the vineyard is certified organic. 2020 was a warmer year, and the wine shows it when you taste it next to the 2021, which is cooler. This is a little rounder, with 13.5% alcohol and mellow acidity, with more cherry than flowers, tasty and juicy. It finishes dry and chalky.”

“The 2020 Pinot Noir La Savante from Gualtallary, Uco Valley was aged for 15 months in 30% new barrels. Cherry red in color. The nose presents notes of anis, herbs and damp earth with cinnamon and a little ripe cherry along with elegant aromas from the aging process such as cedar and sweet spices. Intense in the mouth, the oak provides a framework for the fresh, chalky palate.”

Wine Production

Clone 115 was fermented with 20% whole clusters and indigenous yeast in Oak roll-fermentor of 600L and close 777 was fermented with 50% whole clusters and indigenous yeast in small stainless-steel tanks of 500L.  Punch-down extraction was done by hand.  7-10 days of maceration with malolactic fermentation in the barrel.

About the Vineyard

In both La Savante and Histoire d'A we use whole clusters during fermentation to highlight the texture and graininess of the wines.  La Savante has greater minerality with spicy red fruits.
