Wine Production

Clone 115 is fermented with 20% whole clusters and indigenous yeast in a 600L oak roll-fermentor, and clone 777 is fermented with 50% whole clusters and indigenous yeast in small 500L stainless-steel tanks.  Punch-down extraction is done by hand. 7-10 days of maceration with malolactic fermentation in the barrel.

About the Vineyard

Both Domaine Nico La Savante and Historie d’A are whole cluster fermented to highlight the texture and graininess of the wines. La Savante has a more mineral texture with notes of spicy red fruit.
